For the Pasta Bake:

12 oz (340g) penne or rotini pasta

1 lb (450g) ground beef

1 medium onion (finely chopped)

1 packet (1 oz) ranch seasoning mix

1 can (10.5 oz) condensed cream of mushroom soup

1 cup sour cream

1/2 cup milk

1 cup shredded cheddar cheese (for the sauce)

1 cup shredded cheddar cheese (for topping)

1/2 tsp black pepper

1/2 tsp salt (adjust to taste)

1 tbsp olive oil (for cooking)

Instructions
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into small pieces with a wooden spoon. Drain excess fat.
Add the chopped onion and minced garlic to the skillet with the ground beef. Cook for 3-4 minutes until the onion is softened and fragrant.
In a large mixing bowl, whisk together the ranch seasoning, cream of mushroom soup, sour cream, milk, black pepper, and salt. Stir in 1 cup of shredded cheddar cheese.
Add the cooked pasta and ground beef mixture to the bowl with the sauce. Stir until everything is well coated.
