  • 12 oz spaghetti noodles (break in half for easier serving)

  • 1 (10.5 oz) can cream of chicken soup (or mushroom for variation)

  • 1 (10.5 oz) can cream of mushroom soup

  • 1 (14.5 oz) can diced tomatoes (undrained)

  • 1 (4 oz) can diced green chiles (optional for mild heat)

  • 1 small onion, diced

  • 1 green bell pepper, diced

  • 3 cloves garlic, minced

Creamy Cheese Sauce

  • 8 oz cream cheese, cubed (softened for smoother melting)

  • 2 cups shredded cheddar cheese

  • 1 cup chicken broth (low-sodium preferred)

  • 1 tsp Italian seasoning

  • ½ tsp paprika (for depth)

  • Salt & black pepper to taste

Garnish (Optional)

  • Fresh parsley or basil

  • Extra shredded cheese

  • Red pepper flakes (for spice lovers)


Instructions

Step 1: Prep the Chicken & Veggies

  • Place chicken breasts at the bottom of the slow cooker.

  • Add diced onion, bell pepper, garlic, diced tomatoes, and green chiles (if using).

Step 2: Mix the Sauces

  • In a bowl, combine cream of chicken soup, cream of mushroom soup, chicken broth, Italian seasoning, paprika, salt, and pepper.

  • Pour over the chicken and veggies.

Step 3: Slow Cook

  • Cover and cook on LOW for 4-5 hours or HIGH for 2.5-3 hours until chicken is tender.

  • Shred chicken with two forks inside the crockpot.
