Ingredients
(Serves 6-8)
-
3 lbs chicken thighs & drumsticks (bone-in, skin-on for best flavor)
-
1 tsp salt (adjust to taste)
-
1 tsp black pepper
-
1 tsp garlic powder
-
1 tsp onion powder
-
1 tsp paprika (smoked or sweet)
-
1 tsp dried thyme (or rosemary)
-
½ cup chicken broth (or water)
-
1 onion, sliced (optional)
-
3 garlic cloves, minced
-
2 tbsp olive oil or butter
(Optional Add-Ins: Potatoes, carrots, mushrooms, or a splash of lemon juice for brightness.)
Instructions
Step 1: Season the Chicken
Pat the chicken dry with paper towels. In a bowl, mix salt, pepper, garlic powder, onion powder, paprika, and thyme. Rub the seasoning all over the chicken.
Step 2: Sear (Optional but Recommended!)
Heat olive oil in a skillet over medium-high heat. Sear the chicken for 2-3 minutes per side until golden brown. This adds extra flavor!
Step 3: Layer in the Slow Cooker
Place sliced onions and minced garlic at the bottom of the crockpot. Add the seared (or raw) chicken on top. Pour in chicken broth.
Step 4: Cook Low & Slow
-
For tender, fall-off-the-bone chicken: Cook on LOW for 6-7 hours.
-
For faster cooking: Use HIGH for 3-4 hours.
Step 5: Shred or Serve Whole
Once done, the chicken should pull apart easily with a fork. Serve as-is or shred for tacos, soups, or sandwiches!
