This recipe delivers restaurant-quality flavor in just 15 minutes, making it perfect for weeknight dinners, date nights, or impressing guests. The key? Fresh shrimp, good-quality butter, and a splash of white wine for depth.

 


Ingredients

For the Shrimp Scampi:

  • 1 lb large shrimp, peeled & deveined (tails on or off)

  • 4 tbsp unsalted butter

  • 2 tbsp olive oil

  • 4 garlic cloves, minced

  • ½ cup dry white wine (like Sauvignon Blanc or Pinot Grigio)

  • 1 lemon (zest + 2 tbsp juice)

  • ¼ tsp red pepper flakes (optional, for heat)

  • Salt & black pepper to taste

  • ¼ cup fresh parsley, chopped

For Serving (Optional):

  • 8 oz linguine or spaghetti (cooked al dente)

  • Crusty bread (for soaking up sauce)

  • Grated Parmesan cheese


Instructions

Step 1: Prep the Shrimp

  • Pat shrimp dry with paper towels.

  • Season lightly with salt & pepper.

Step 2: Sauté Garlic in Butter & Oil

  1. Heat a large skillet over medium heat.

  2. Add butter & olive oil—let butter melt but not brown.

  3. Add garlic & red pepper flakes, sauté 30 sec until fragrant (don’t burn!).

Step 3: Cook the Shrimp

  1. Add shrimp in a single layer.

  2. Cook 1-2 min per side until pink & opaque (don’t overcook!).

  3. Remove shrimp to a plate (they’ll finish cooking in the sauce).

Step 4: Make the Sauce

  1. Pour in white wine, simmer 2 min to reduce slightly.

  2. Stir in lemon juice & zest.

  3. Return shrimp to the pan, toss to coat.

  4. Sprinkle with parsley and adjust seasoning.

Step 5: Serve Immediately

  • Toss with cooked linguine or serve with crusty bread.

  • Garnish with extra parsley & lemon wedges.
