Ingredients

Here’s what you’ll need to make Mississippi Chicken (serves 6-8):

For the Chicken:

  • 2 lbs (900g) boneless, skinless chicken breasts or thighs

  • 1 packet (1 oz) ranch seasoning mix

  • 1 packet (1 oz) au jus gravy mix

  • 1/2 cup unsalted butter (1 stick)

  • 8-10 pepperoncini peppers (plus 1/4 cup of the brine)

  • 1/2 cup chicken broth (optional, for extra moisture)

For Serving:

  • Cooked rice, mashed potatoes, or buns

  • Fresh parsley (optional, for garnish)

Instructions

Step 1: Prepare the Slow Cooker

  1. Place the chicken breasts or thighs in the slow cooker in a single layer.

Step 2: Add the Seasonings

  1. Sprinkle the ranch seasoning and au jus gravy mix evenly over the chicken.

Step 3: Add the Butter and Pepperoncini

  1. Place the stick of butter on top of the chicken.

  2. Add the pepperoncini peppers and pour in 1/4 cup of the brine.

Step 4: Cook the Chicken

  1. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.

Step 5: Shred and Serve

  1. Use two forks to shred the chicken directly in the slow cooker.

  2. Stir to combine the chicken with the sauce.

  3. Serve over rice, mashed potatoes, or on buns. Garnish with fresh parsley if desired.

Notes

  • Don’t Overcook: Chicken breasts can dry out if cooked too long. Check for doneness after 6 hours on low or 3 hours on high.

  • Adjust Seasonings: Taste the sauce before serving and add salt or pepper if needed.
